Fresh Quinoa Bowl

INGREDIENTS

  • 1 pack of Lightly dressed quinoa from Pablo's Quinoa
  • 1 small can of brown lentils
  • 1/3 cucumber, diced
  • ½ lime
  • 1 handful of fresh parsley
  • 1 handful of pistachios
  • 1 tsp green pesto
  • Salt and pepper to taste

METHOD OF PREPARATION

1. Prepare the Lightly dressed quinoa according to the preparation method on the packaging. This can be done in the microwave, frying pan or in hot water.
2. Remove the quinoa from the pouch and place it in a deep plate or bowl. Let it cool for a few minutes.
3. In the meantime, cut the cucumber into cubes and rinse the brown lentils. Also finely chop the fresh parsley.
4. Add the cucumber, lentils and parsley to the quinoa and mix it together with a spoon.
5. Add the juice of half a lime, a handful of pistachios and a teaspoon of green pesto and mix together again.
6. Season with salt and pepper if necessary. Enjoy your meal
