Pumpkinsoup

Supplies

(For 4 persons)

  • 1 nutmeg pumpkin, medium sized
  • 1 chili pepper
  • 1 can of tomatoes, 400 g
  • 1 can coconut milk, 400 ml or 250 ml soy cream
  • 1 red onion, large
  • 4 cloves of garlic
  • 2 tsp curry powder
  • ½ tsp cumin
  • ½ tsp coriander
  • 3 tbsp soy sauce, tamari or shoyu
  • water

Preparation method

  1. Peel the pumpkin, onion and garlic.

  2. Cut the peeled ingredients and the chili pepper into pieces.

  3. Place all ingredients in a saucepan and add about 400 ml of water.

  4. Bring this to the boil and let it simmer until the pumpkin is done.

  5. Mix everything using a blender or hand blender, adding additional water until the desired thickness is reached.

  6. Serve with some ground black pepper and fresh coriander.
