Wraps with pulled jackfruit

Recipe for 2 people
Time: 20 mins.

SUPPLIES:

  • 4 wraps
  • 100 ml BBQ sauce
  • 1 can jackfruit (280 g drained weight)
  • 1 onion
  • serve with coleslaw (red cabbage, handful of raisins and 2 tbsp (vegan) mayonnaise)
PREPARATION METHOD: WRAPS WITH PULLED JACKFRUIT

Start by making the coleslaw. Cut the red cabbage very finely. Mix the red cabbage with raisins and mayonnaise. Season with a pinch of salt and pepper. Then drain the jackfruit in a sieve and rinse with water. Pull the jackfruit apart with your hands until you have strips. Cut the onion into half rings and pour a dash of oil into a pan. Fry the onion and after a few minutes add the jackfruit.

Fry for about 5 minutes and then add the BBQ sauce. Let this simmer for a few more minutes and then turn off the heat.

Serve the wraps with coleslaw and pulled jackfruit. You can also add some lettuce if desired.
